Corn Cake Casserole

Ingredients:
Chi chi's corn cake mix
1 can Bearitos Refried Beans
1/4 jar tomato sauce
1/2 bag rice or soy cheese

Directions:
Mix and bake the corncake as per directions on the back of the mix. Mix the tomato sauce and can of refried beans in a small bowl. Place the bean/tomato mixture on top of the cooked corn cake and top with rice cheese place back in oven (350 degrees) for 5-10 minutes or until cheese is melted.

Chi Chi's corn cake mix

Tips:
I love adding some veggie sausage on top of the beans and then topping it off with cheese, whereas my aunt likes to add olives and fresh tomatoes. Be creative!
